MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Gretchen's Zucchini Bread Categories: Quickbreads Yield: 4 Servings 3 c Flour 1 1/2 c Sugar 4 1/2 Teaspoon Baking powder 1 ts Salt 1 c Chopped walnuts, optional 4 Eggs 2/3 c Oil 3 c Shredded zucchini 1 tb Grated lemon peel 20 1/2 Other Carbohydrates Preheat oven to 350. Grease two 8 1/2 x 4 1/2 inch loaf pans or four miniature loaf pans. Mix flour, sugar, baking powder, salt and nuts in a large bowl. Beat eggs slightly in medium bowl and stir in oil, zucchini and grated lemon peel. Stir into flour mixture just until moistened. Spoon batter evenly into pans. Bake the large loaves for 1 hour and the miniature loaves for 45-50 minutes. Cool in pans on wire rack for 10 minutes. Remove from pans and cool completely on racks.
