MMMMM----- Meal-Master Recipe Title: Bagels 10 Categories: Yeastbreads Yield: 1 2 Blocks fresh yeast OR 2 pk Active dry yeast) 4 1/4 All purpose flour 4 1/2 c Sifted 1 1/2 c Lukewarm water 1 tb Salt 3 tb Sugar In large mixer bowl, combine yeast and 1.75 c. of the flour combine water, sugar, & salt. Add to yeast mixture. Beat at low speed for 1/2 minute, scraping sides of bowl constantly. Beat 3 min. at high speed. By hand, stir in enough of the remaining flour to make a moderately stiff dough. Turn out on floured surface, and knead until smooth (about 5-8 min.) Cover and let rest for 15 minutes Shape into smooth balls. Punch a hole in the center of each ball with a floured finger. Pull gently to enlarge hole, working each bagel into uniform shape. Cover and let rise for 1/2 hour. In large kettle, combine 1 gallon water and 1 tbsp sugar. Bring to boil. Reduce temp to simmering. Cook bagels 4-5 at a time for 7 min., turning once. Drain. Place on ungreased baking sheet. Bake in 375F oven for 30-35 minutes. Yield: 12 bagels.
