Let stand, covered, at room temperature for 2 days. It becomes a spongy mass and develops a yeasty aroma. Cover and refrigerate. Feed at least once a week by stirring in 1 cup milk and 1/4 cup sugar to keep the starter alive. Be prepared to use it often, or if you tire of it for a while, freeze in a covered container then thaw and feed.
