MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Helen's Steak & Kidney Pudding Categories: Family Yield: 4 servings MMMMM--------------------MM BY HELEN PEAGRAM------------------------- MMMMM---------------------------PASTRY-------------------------------- 3/4 lb Self Rising Flour Salt & Pepper 6 oz Suet, shredded ;ice water MMMMM--------------------------FILLING------------------------------- 1 1/2 lb Chuck steak, cubed 8 oz Beef kidneys, diced 1 md Onion, diced 2 tb Flour Note: DO NOT GO OUT AND BUY SELF-RISING FLOUR! It's expensive, it goes bad quickly, and unless you make bread everyday, you'll never use the whole bag!!!! For each cup of "self-rising" flour that you need, use instead: 1 cup all-purpose flour ,1 teaspoon baking powder , 1/4 teaspoon salt, If recipe already has salt in it, you may want to omit the salt from the original recipe. Place S.R. flour and suet in med bowl. Using a knife, mix well to blend. Add ice water mixing with knife to form a dough that will cling together. Roll out and line a well greased 5 cup bowl. saving enough for lid. Remove a small amount of excess and build up the bottom of the lining. Mix the prepared beef, kidney and onion with the flour and place in lined bowl. Add water to the top of the mixture and put top on. Cover with a double piece of foil, greased and pleated and tie making a handle. Steam for 5 hours. i MMMMM
