      Title: Peach Doughnuts From Baking Mix

      Yield: 18

      1 qt (Approx.) Vegetable Oil
    1/3 c  Water
      2    Eggs
      3 tb Sugar
      2 c  All-Purpose Baking Mix (See
           Recipe)
    1/2 c  Canned Peaches, Drained And
           Chopped
           Confectioner's Sugar

  In a 4-qt Dutch oven over medium heat, heat 1" oil to 365 F on 
  deep-fat thermometer. Meanwhile, in a large bowl, mix water, eggs 
  and sugar until well blended. Stir in All-purpose Baking Mix just 
  until moistened. Gently stir in peaches. Drop 6 rounded Tbsp of 
  batter, 1 Tbsp at a time, into hot oil. Fry, turning once, 3 mins 
  or until golden brown on both sides. Remove and drain on paper 
  towels. Repeat with remaining batter. Roll doughnuts in 
  confectioners' sugar. Serve warm. Makes 18 doughnuts.
