MMMMM----- Meal-Master Recipe Title: Oliebollen 2 Categories: Doughnuts Yield: 20 1 pk Dry yeast 1 c Lukewarm milk 1 1/2 c Mixed currants & raisins 1 Cooking apple, peeled, Cored 2 1/4 c Flour 2 ts Salt 1 Egg, lightly beaten & Chopped Oil for deep frying Powdered sugar Oliebollen (Dutch doughnuts) are a traditional treat on New Year's Eve in Holland. If they are fried too slowly the crusts become hard & tough & the doughnuts become greasy. Sprinkle yeast over 1/4 c milk & stir to dissolve. Combine flour & salt & add remaining milk & egg. Add yeast mixture, currants, raisins & apple; mix well. Let stand in warm place until doubled in bulk. Heat oil for deep frying. Shape balls of batter w/2 metal spoons & drop them into hot fat a few at a time. Deep fry for 8 mins or until golden brown. Drain on paper towels. Serve piled on a dish & sprinkled w/powdered sugar.
