Oil, for deep frying Sugar, castor, mixed with A little Cinnamon. Gold Coast, Queensland, Australia from FINE FOOD FROM Hot Turkish Doughnuts Mix together the yeast, sugar and water until frothy. Combine the yeast mixture with the flour, salt, milk and extra water until it makes a smooth batter. Set aside in a warm place for 1 hour to prove/rise and thicken. Stir again. Heat the oil in a deep fryer or wok until it reaches 170-180^C. Drop teaspoonfuls of the mixture into the oil, rolling them to ensure even cooking. When golden, remove from the pan and sprinkle with castor sugar and cinnamon.
