MMMMM----- Meal-Master Recipe Title: French Market Beignets 3 Categories: Doughnuts Yield: 24 1/4 c Shortening 1/2 c Sugar 1 ts Salt 1 c Boiling water 1 c Evaporated milk 1 pk Yeast 1/2 c Lukewarm water 2 Eggs; well beaten 7 c Flour Combine shortening, sugar, salt, and boiling water in large mixing bowl and stir to melt shortening. Add evaporated milk and cool to lukewarm. Dissolve yeast in lukewarm water. Add eggs with yeast to milk mixture. Stir in 4 cups flour and beat for 5 minutes or until smooth. Work in 3 more cups of flour and knead only until smooth. Grease, cover and refrigerate for at least 2 hours (up to 5 days). Roll 1/4 of dough at a time to 1/16 inch thick. Cut in small squares. Let rise until light. Fry in deep oil until golden. Dust with powdered sugar and serve hot.
