MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Helen's Cheese Souffle' Categories: Cheese/eggs Yield: 6 servings MMMMM--------------------MM BY HELEN PEAGRAM------------------------- 4 ts Margarine or butter 12 c Flour 1 1/4 Cup Milk 1 ts Salt 1 ds White pepper 4 Egg yolks 1 c Cheese, grated (up to 1 1/2 c Cheese) 4 Egg whites Melt fat a heavy saucepan. Blend in flour and seasonings and gradually add milk. Whisk or stir constantly til mixture thickens. In a separate bowl, beat egg yolks and add the hot mixture to them gradually while stirring constantly. Stir in cheese. When cool, fold in stiffly beaten egg whites. Pour into a large or individual ungreased casseroles. Oven poach ( place in large dish with water in it) at 350 for 1 hour for large and 25 minutes for individual souffle's. The souffle' is cooked when a knife inserted comes out clean. SERVE AT ONCE! MMMMM
