MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Jamaican Fruit Loaf Categories: Quickbreads Yield: 1 Servings 3 oz Margarine or butter Softened; 75 G) (75g) (75g) 4 oz Brown sugar; (100g) 3 tb Clear honey 2 Eggs - size 3 - beaten 8 oz Bananas - peeled and Mashed; 25 G) (225g) (225g) 8 oz Self raising flour; (225g) 1 Heaped Teaspoon Schwartz Ground Allspice 1/4 ts Bicarbonate soda 1/2 ts Salt 8 oz Raisins; (225g) Preheat oven to 350F, 180C, Gas Mark 4. Cream the margarine or butter and sugar together. Stir in 2 tbs of honey. Add the beaten eggs and mashed bananas. Mix well. Sieve the flour with the Ground Allspice, bicarbonate of soda and salt. Carefully fold the flour mixture and raisins into the creamed ingredients. Place in a 8 inch x 4 inch (20cm x 10cm) greased and lined loaf tin. Bake in the oven for approx 1 hour or until well risen and firm to touch. Remove the loaf from the tin and glaze the top with the remaining honey. Leave to cool.
