MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Mango Bread Categories: Quickbreads Yield: 4 Servings 2 Eggs 1 1/4 Cup Sugar 1/2 c Corn or canola oil 1/4 c Honey 2 c Ripe mango, peeled, cut up And slightly mashed 2 c All-purpose flour 2 ts Baking soda 2 ts Cinnamon 1/2 ts Salt 1/2 ts Vanilla extract 1/2 c Chopped walnuts 1/2 c Raisins Preheat oven to 350 F. Beat the eggs until fluffy, then beat in the sugar, oil, and honey. Blend in the mango. In a separate bowl, combine the flour, baking soda, cinnamon, and salt. Add the dry ingredients to the egg mixture, combine, and stir in the vanilla, walnuts and raisins. Pour the batter into 2 greased 8 1/2 x 4 1/4-inch or 9 x 5 inch loaf pans. Bake 40 to 45 minutes or until the bread springs back to the touch and a tester comes out clean. Let the loaves stand for 20 minutes before serving them from the pans. Note: 3 to 4 mangoes will yield the 2 cups you need for this recipe. As you cut up the mangoes be careful not to include any of the fibrous matter near the pit.
