Let stand 5 min. Stir gently to moisten any dry particles on top. Sift flour and salt into large bowl. Melt butter. Lightlyy beat butter, eggs, lemon peel into yeast mixture. Pour into flour mixture combining to make dough. Take out of mixing bowl. Place dough on working table. Knead dough 5-10 min. until smooth.Cover, let rise in warm place (1hour). FRUIT LOAF Combine almonds, candied peel, raisins and rum in a small bowl. Let stand 30 min. Divide risen yeast dough in half, knead each half lightly. Knead fruit mixture into each half. Let stand 15 min. Grease a baking sheet. Shape fruit dough into your favourite shape of loaf and place on sheet. Let stand in a warm place 30 min. Preheat oven to 375F. Cut a cross on top of loaf.
