============================================== JIM'S MINT JELLY ============================================== Yields: 4 1/2 PINTS Cuisine: Main Ingredient: 2 cups Mint leaves 1 cup Water 1 teaspoon Lemon Juice 3 cups Sugar 1/2 cup Cider Vinegar 3 oz Pectin 4 Mint In a glass heat proof bowl, place chopped fresh mint and add the boiling water. Cover and let stand for 30 minutes. Drain and squeeze out the mint through a colander and add enough water to make 1 cup. Place this infusion, lemon juice, sugar and vinegar in a heavy saucepan. Bring to a hard boil. Immediately add the pectin and food colouring ( few drops of green) if desired. Continue cooking to a full rolling boil. Boil for exactly 1 minute. Remove from heat and skim off foam with a metal spoon. Pour into hot sterilized jars, add optional finely chopped fresh mint if desired.
